Caprese Salad with Cherry Tomatoes

This Caprese Salad with Cherry Tomatoes is one of the most delicious and easiest summer salad recipes. It’s made with fresh mozzarella cut into bite-sized pieces, cherry tomatoes, fresh basil, and homemade balsamic vinaigrette. This chopped Caprese salad is naturally gluten-free, making it the perfect party or bbq side dish or main course.

Equipment

  • Sharp knife
  • Cutting board
  • Large mixing bowl or serving bowl

Ingredients
  

For the balsamic vinaigrette

  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1-2 teaspoons melted honey

For the salad

  • 1 quart cherry tomatoes
  • 1 16-ounce fresh mozzarella
  • 1/2 cup loosely packed fresh basil

Instructions
 

  • Start by putting the balsamic dressing together.
  • Then slice the cherry tomatoes in half. Place the cherry tomatoes into a large bowl.
  • Cut the fresh mozzarella into small bite-sized pieces and place those into the bowl with the tomatoes.
  • Tear or cut the fresh basil leaves into pieces and sprinkle them on top of the tomatoes and mozzarella.
  • Pour the dressing into the tomato mixture and stir.
  • Season with salt and black pepper. Don't forget this step, because adding in a little salt helps all of the flavors pop.
  • Cover with plastic wrap and refrigerator for about an hour. You can enjoy this immediately, but I like to give the balsamic time to soak into the cheese and tomatoes.
  • Sprinkle with additional fresh basil before serving.

Notes

If you’re making this for a party, you can assemble the Caprese cherry tomato salad 24 hours before, leaving out the fresh basil. Give it a couple of stirs before serving and, if needed, add more dressing. Stir in the fresh basil before serving.
Leftovers will keep for 2-3 days in an airtight container in the fridge. The tomatoes might be a little shriveled but still tasty.
