The Comforting Italian Sausage Pasta Recipe I Always Come Back To

There’s just something about cooking with Italian sausage that instantly makes a recipe feel a little more special.

It’s one of those ingredients that brings so much flavor without needing a lot of extra work, which is probably why I find myself using it again and again in my kitchen. Whether it’s something like my sausage broccoli pasta, a hearty sausage cacciatore, Italian sausage stuffed peppers, meat sauce with ground beef and sausage, or my Italian sausage dip, it’s one of those ingredients that always delivers that comforting, classic Italian flavor.

And then when you pair it with a creamy sauce like this… it takes things to a whole different level.

This recipe really reminds me of those rich, creamy pasta dishes you’d order at a restaurant – almost like an Alfredo, but with even more flavor from the sausage, garlic, and shallots.

And let’s talk about rigatoni for a second.

If you know, you know… rigatoni is just one of those pasta shapes that makes a dish feel extra hearty. The sauce clings to it, the sausage gets tucked inside, and every bite is just so good. I went a long time without being able to find a good gluten-free version, so when I finally discovered one that held up the way I wanted, this quickly became one of those recipes I keep coming back to.

Ingredients

Here are the ingredients you’ll need to make this creamy Italian sausage pasta. You can find the full measurements and instructions in the recipe card below.

  • Gluten-free rigatoni (or other short GFpasta). Rigatoni is my top choice for this recipe because it holds onto the creamy sauce so well and gives the dish that hearty, restaurant-style feel. I personally love using Rummo gluten-free rigatoni, but if you can’t find it, any short pasta like penne, rotini, or farfalle will work. You can even use long pasta if that’s what you have on hand.   • Extra virgin olive oil. This is used to cook the sausage and sauté the shallots and garlic, adding another layer of flavor to the sauce.
  • Italian sausage. This is where a lot of the flavor in this dish comes from. You can use mild, sweet, or hot Italian sausage depending on your preference. I typically use pork Italian sausage, but poultry sausage works great too if you want something a little lighter. If you can find ground Italian sausage from the butcher, that’s always a great option. Otherwise, just remove the casings from sausage links before cooking.
  • Shallots. Shallots have become one of my favorite ingredients to cook with. They give you that onion-like flavor but in a softer, slightly sweeter way that doesn’t overpower the dish.
  • Garlic. Fresh garlic is always the way to go here. It adds that classic Italian flavor that pairs perfectly with the sausage and cream sauce.
  • Heavy cream. This is what gives the sauce its rich, silky texture. You can use half-and-half if you want to lighten it up a bit, but for that true restaurant-style flavor, heavy cream is the way to go.
  • Parmesan cheese. Freshly grated Parmesan melts into the sauce much better than pre-shredded and gives it that smooth, authentic flavor.
  • Salt and black pepper. The sausage adds a lot of seasoning, so I recommend tasting at the end and adjusting as needed.

How to Make Creamy Italian Sausage Pasta

Step 1: Start by bringing a large pot of salted water to a boil and cooking your gluten-free pasta until just al dente. You want to slightly undercook it because it will finish cooking in the sauce. Before draining, reserve about ½ cup of pasta water to use later if needed.

Step 2: In the same pot or a large skillet, heat some olive oil over medium heat and cook the Italian sausage until it’s browned and fully cooked, breaking it into small pieces as it cooks. Once it’s done, remove it from the pan and drain any excess grease if needed.

Step 3: Next, add more olive oil to the pan and sauté the shallots until soft and fragrant. Stir in the garlic and butter and cook just until fragrant, being careful not to let it burn.

Step 4: Slowly pour in the heavy cream and let it gently heat until it begins to lightly bubble. Keep the heat moderate so the sauce doesn’t scorch.

Step 5: Add the sausage back into the pan, then stir in the Parmesan cheese until everything is melted and smooth.

Step 6: Add the pasta and toss everything together until the sauce coats the noodles. Let it cook for a few minutes so the sauce thickens and clings to the pasta. If it becomes too thick, add a splash of reserved pasta water to loosen it.

Step 7: Taste, adjust with salt and pepper, and serve with extra Parmesan on top.

Variations

This is one of those recipes that’s really easy to adjust based on what you have on hand or what you’re in the mood for.

  • You can use just about any pasta shape you like. While rigatoni is my favorite for that hearty, creamy texture, penne, rotini, or even long pasta all work well.
  • If you want to add vegetables, mushrooms are great sautéed right along with the sausage, spinach can be stirred into the sauce at the end until wilted, and broccoli can be cooked ahead of time and mixed in at the end. All of these options add a nice balance to the richness of the sauce.
  • If you like a little heat, a pinch of crushed red pepper flakes is a great addition.

Expert Tips

  • One of the most important things when making gluten-free pasta is to cook it just to al dente – or even slightly under – because it will continue cooking once it’s added to the sauce. This helps prevent it from becoming too soft or breaking apart.
  • Italian sausage can release quite a bit of grease as it cooks, so taking the extra step to remove it and drain the excess grease before building the sauce makes a big difference in the final texture and flavor of the dish.
  • Also, the type of sausage you use will really shape the flavor of the recipe. Mild or sweet sausage keeps things more classic and family-friendly, while hot Italian sausage adds a nice kick.
  • And finally, if your sauce ever feels too thick, that reserved pasta water is your best friend. Just a small splash helps loosen the sauce and brings everything together beautifully.

Serving Suggestions

Ingredients
  

  • 12 ounces gluten-free rigatoni or any short pasta
  • 1/4 cup extra virgin olive oil
  • 1 lb Italian sausage links casings removed
  • 1 1/2 tablespoons finely chopped shallots
  • 1 tablespoon salted butter
  • 4 garlic cloves minced
  • 2/3 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese more for serving
  • salt and pepper to taste

Instructions
 

  • Cook the pasta. Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook until al dente according to package directions. Do not overcook, as the pasta will continue cooking in the sauce. Before draining, reserve about ½ cup of pasta water. Drain and set aside.
  • Cook the sausage. In the same pot or a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage and cook until browned and no longer pink, breaking it into small pieces as it cooks. Remove the sausage from the pan and set aside. Carefully drain any excess grease if needed.
  • Sauté the aromatics. Add the remaining olive oil to the same pan over medium heat. Add the shallots and cook for 2–3 minutes until softened and fragrant. Add butter and then stir in the garlic and cook for another 1–2 minutes, just until fragrant and lightly golden. Be careful not to burn the garlic.
  • Make the sauce. Slowly pour in the heavy cream and stir to combine. Let the sauce gently simmer over medium-low heat until it starts to bubble slightly. Do not let it boil.
  • Combine everything. Add the cooked sausage back into the pan and stir until heated through. Stir in the grated Parmesan cheese until melted and smooth.
  • Add the pasta. Add the cooked pasta to the sauce and toss until evenly coated. Let it cook for a few minutes so the sauce thickens and clings to the pasta. If the sauce becomes too thick, add a splash of reserved pasta water to loosen it.
  • Finish and serve. Taste and season with salt and black pepper as needed. Serve hot with extra grated Parmesan cheese.

Notes

Helpful Notes

  • Cook pasta just to al dente (or even slightly under). Gluten-free pasta can go from perfectly cooked to too soft very quickly. Since the pasta will continue cooking once it’s added to the sauce, pulling it a minute or two early helps it hold its texture.
  • Always reserve some pasta water before draining. The starchy water is perfect for loosening the sauce if it becomes too thick and helps the sauce cling better to the pasta.
  • Keep the heat moderate when cooking garlic. Garlic can burn quickly, which will give the entire dish a bitter flavor. Cook just until fragrant and lightly golden.
  • Use a good-quality Italian sausage for the best flavor. The sausage is one of the main flavor components in this dish, so choosing a high-quality sausage makes a big difference.
  • Adjust the sausage to your taste. Mild or sweet Italian sausage will give you a more classic, family-friendly flavor, while hot Italian sausage will add a little heat and spice.
  • Drain excess grease from the sausage if needed. Italian sausage can release quite a bit of fat while cooking. Removing some of the grease helps keep the sauce rich and creamy without feeling too heavy.
  • Choose sturdy pasta shapes. Rigatoni is ideal because it holds the sauce well, but penne, rotini, or other short gluten-free pasta shapes work great too.
